Ingredients:

75 gm Fresh wholemeal breadcrumbs, (3oz)
75 gm Ready-to-eat dried apricots, chopped (3oz)
50 gm Walnuts, finely chopped (2oz)
Zest and juice of 1/2 lemon
1 tbl Freshly chopped parsley
1 x Egg, beaten
Instructions:
Instructions: Place the breadcrumbs, apricots, walnuts, lemon zest and juice, parsley, egg and seasoning in a bowl, and mix well.

Use as required to stuff a bird or cook separately in a preheated oven 200 C/400 F or Gas Mark 6 for 20 minutes.

NOTES : A delicious fruit and nut stuffing for poultry.
