1 tbl Olive Oil
1/2 cup Onions, Chopped
1 cup Mushrooms, Sliced
8 oz Artichokes, Canned, *
2 cup Chicken Broth
1/2 cup Green Peas
4 tbl Unbleached Flour
2 cup Evaporated Skimmed Milk
Instructions:
Instructions: * Drain and chop the canned artichokes.

In a large saucepan heat the oil and saute the onions. Add the mushrooms, artichokes, and broth. Cook about 5 minutes or until tender. Add the peas. Blend the flour into the evaporated milk and add to the mixture in the pan. Cook for 5 to 7 minutes or until slightly thickened. Season to taste with salt and pepper.
