Instructions: In a large skillet, heat the oil over medium heat. Add the carrots and onions. Cook, stirring, 5 minutes. Stir in the rice, garlic, peppers, and ginger. Cook, stirring constantly, until the rice is hot and begins to get crusty. Stir in the ham and chicken.
