Ingredients:

1/4 cup Smooth peanut butter
1 tbl Soy sauce
1 tbl Fresh lemon juice
1 x Clove (small) garlic, minced
1/4 tsp Dried hot pepper flakes, or to taste
1/4 tsp Sugar
1/4 cup Hot water
6 oz Spaghetti
1 x Cucumber, peeled, halved, seeded, cut diagonally into 1/8" slices
1/3 cup Thinly sliced scallion
Instructions:
Instructions: Use a blender to mix peanut butter soy sauce, lemon juice, garlic, pepper flakes, sugar and water until the sauce is smooth. In a kettle of boiling salted water, boil the spaghetti until it is just tender. Drain and rinse briefly under cold water. Drain well, transfer to a bowl. Toss with the sauce, cuke, and scallions. S&P to taste. Serve the pasta at room temperature.
