1 lb fresh asparagus
2 tbl olive oil
1 bn green onions chopped
2 x garlic cloves minced
1 x red bell pepper seeded, and
cut into 2" strips
3/4 tsp salt
1/4 cup seasoned bread crumbs
Instructions:
Instructions: Preheat broiler. Break off asparagus ends at the point where the stems snap easily; discard ends. Cut asparagus into 2-inch lengths.

In a large skillet, heat oil over medium heat. Add green onions and garlic; cook 2 to 3 minutes, or until softened. Add asparagus, bell pepper, and salt. Cover and cook 5 minutes, or until asparagus is just tender. Spoon into a broiler-safe casserole dish.

Stir together bread crumbs and cheese and sprinkle over the asparagus mixture. Broil 2 minutes, or until light brown.

This recipe yields 4 servings.
