Instructions: Cooks notes: To season a cast-iron skillet, rub it with canola oil or peanut oil. Sprinkle in a little coarse salt, such as kosher salt. Place in middle of preheated 500-degree oven 1 hour. Allow skillet to cool and wipe out with a cloth or paper towel; repeat process.
Preliminaries: Place seasoned cast-iron skillet in a 500-degree oven for 1 hour. About 30-45 minutes before cooking, remove steaks from refrigerator. Preheat outdoor barbecue. Season meat on both sides with salt and a generous amount of freshly ground black pepper. Cautiously carry heated skillet to outdoor barbecue and place on grill. Place steaks in skillet and sear 1-2 minutes on each side, turning meat with long tongs. Remove steaks and place on high-heat setting on grill. Grill about 6-7 minutes on each side, covered with barbecue lid, or until meat reaches the desired degree of doneness.
