Instructions: Preheat oven to 350. Heat oil in a large nonstick skillet over high heat.
Add aubergine; saute 3 minutes. Add bell pepper and next 5 ingredients (bell pepper through garlic); saute 1 minute. Add tomato juice and water; cook 12 minutes or until vegetables are tender, and liquid is absorbed. Remove from heat; stir in lime juice and salt. Divide aubergine mixture evenly among tortillas; sprinkle with cheese, and roll up. Place burritos, seam side down, on a jellyroll pan. Bake at 350 for 5 minutes or until thoroughly heated.
