1 med yellow onion, diced
1 med green bell pepper, seeded and diced
2 cup unpeeled diced aubergine
2 x cloves garlic, minced
30 oz canned red kidney beans, drained
15 oz canned stewed tomatoes
15 oz canned crushed tomatoes
2 tbl dried parsley
2 tsp chili powder
1 tbl dried oregano
1 tsp dried thyme
1/2 tsp salt
1/2 tsp ground black pepper

Cross ratatouille, the classic Mediterranean aubergine stew, with Tex-Mex chili, and a chunky, herb-scented star is born.

Heat oil in large saucepan. Add onion, bell pepper, aubergine and garlic. Cook over medium heat, stirring occasionally, until vegetables are tender, about 10 minutes.

Stir in kidney bears, stewed tomatoes, crushed tomatoes, parsley, chili powder, oregano, thyme, salt and pepper. Cook over low heat, stirring frequently, about 20 minutes. Remove from heat; let stand 8 to 10 minutes before serving. Serve topped with scallions.

Makes 6 servings.
