5 sm aubergines or 1 medium one
8 oz thinly-sliced beef
4 tbl sesame oil
----------------- SEASONING MIXTURE ----------------
2 tbl soy sauce
1 tbl sugar
2 tbl chopped green onions
1 tsp minced garlic
2 tsp prepared sesame seeds
1 dsh freshly-ground black pepper
1 tbl sherry
1 tbl sesame oil
----------------- VINEGAR-SOY SAUCE ----------------
3 tbl soy sauce
1/2 tbl vinegar
Instructions:
Instructions: Wash aubergines and remove stems. Cut into 3/8-inch slices, lengthwise for the small ones, crosswise for the medium one. Heat sesame oil in skillet and fry aubergine until golden brown.

Mix beef with Seasoning Mixture ingredients and brown both sides on ungreased skillet.

Sandwich the beef between 2 slices of aubergine. Serve with the Vinegar-Soy Sauce.

This recipe yields 4 servings.

Comments: Oriental aubergines (3 to 5 inches) or Italian aubergines (which are slightly larger) can be found in many supermarkets.
