2 lb mixed ground beef, veal and pork
2 x eggs, lightly beaten
2 cup bread crumbs
1 cup chopped onion
1/2 cup chopped green pepper
1/4 cup milk
1/4 cup horseradish
1 tsp dry mustard
2 tsp salt
1/8 tsp freshly ground pepper
1/4 cup ketchup, more for garnish
Instructions:
Instructions: Preheat the oven to 350 degrees. In a bowl, combine everything but the bacon. Mix, using your hands, until well blended. In a roasting pan or iron skillet, shape the mixture into a lobster. With the ketchup, either rub a thin coating all over the lobster or make lines for visual appeal. Wrap the bacon slices across the tail or at joints, so everyone gets a little. Bake for 50 to 60 minutes, covering the claws with foil after 40 minutes so that they dont dry out.
