6 x Lobster As
Fresh herbs
Garlic
Dijon mustard
Butter
----------------- BBQ SAUCE ----------------
8 x Tomatoes, chopped and deseeded
150 ml Vinegar, (1/4 pint)
1/2 x Piece ginger, chopped
2 x Cloves garlic
1 x Piece chilli
1/2 x Onion
150 gm Sugar, (5z)
Curry powder
Cardamom
Coriander, fresh stalks
Cumin
Instructions:
Instructions: Reduce the vinegar and sugar until caramelised, add ginger, garlc, chilli and spices. Cook for 2 minutes, add chopped tomatoes and continue to cook. Blend, return to heat and finish with fish sauce and seasoning.

Split lobster, brush with oil then mark on a hot grill. Spread herb butter onto the lobster and roast in hot oven.

Serve sauce along side.
