Instructions: * Note: Dried cherries are awesome in here, but you can use any dried fruit you prefer, like sweetened dried cranberries, raisins, or another fruit mix.
Preheat the oven to 375 degrees. Coat a 9- by 13-inch baking dish with nonstick cooking spray. In a large bowl, cream the butter and the granulated and brown sugars until light and fluffy. Add the eggs and vanilla and beat until well combined. Stir in the flour and baking soda until well combined. Add 1 cup of the white baking chips and the dried cherries; mix well. Spread the dough into the baking dish and sprinkle evenly with the remaining baking chips. Bake for 30 to 35 minutes, or until slightly firm in the center. Allow to cool, then cut into bars.
