6 cup baby spinach
1/2 cup goat cheese, crumbled
1 pt fresh raspberries
1/4 cup sliced almonds
2 cup olive oil
2 x cloves garlic, minced
2/3 cup raspberry vinegar
1 tsp dry mustard
1 tbl shallots, finely chopped
Instructions:
Instructions: Combine spinach, goat cheese raspberries and almonds in a large bowl. In a cruet, combine olive oil, garlic, raspberry vinegar, dry mustard, shallots and salt and pepper and shake well. Pour over salad and toss just before serving. We love the baby spinach and actually spinach in general. You can find some fresh spinach this time of year in some of the farmers markets but the stuff in the grocery stores is also very good. The vinaigrette is interesting and very flavorful and the raspberry adds a nice touch.

Chefs Notes: Goat cheese is better for you than most other cheeses so you are already ahead of the game with this recipe. The raspberries add some sugar to the dressing but not enough to worry about. The only other ingredients that cause any concern are the olive oil and almonds but olive oil is not bad for you and almonds are just about the best nut you can eat. We even understand that almonds contain some type of cancer preventative chemical. See how well we look after you?
