600 gm chicken or pork ribs or both
1 pkt bah kut teh herbs (available in supermarkets)
10 clv garlic (or 1 complete pod) wash but do not peel
4 lt water

4 tbl light soy sauce
2 tsp sugar
----------------- Accompaniments: ----------------
6 x black mushrooms - soak
1 x tin golden mushrooms
100 gm button mushrooms - slice thinly

BRING water to a boil in a pot. Add herbs and chicken or pork ribs. Allow to boil, then lower the heat and simmer over medium-low flame for one hour or until meat is tender. Add seasoning and accompaniments.

Dish into a casserole and garnish with chopped spring onions and coriander leaves. Serve hot with plain rice.
