1/2 cup virgin olive oil
juice of 1 lime
2 tbl packed thyme leaves, roughly chopped
2 tbl packed sage leaves, roughly chopped
2 tbl packed basil leaves, roughly chopped
2 x cloves garlic, peeled and roughly chopped
1 x Scotch bonnet chili, seeded and minced
3 x scallions, minced
2 sm inner stalks celery, minced
1/2 tsp hot paprika
1/4 tsp ground cloves
1/4 tsp ground mace
1/4 tsp salt
Instructions:
Instructions: 1. To prepare Bajan spice paste, place oil, lime juice, herbs and garlic in a blender or food processor, and blend until fairly smooth.

2. Transfer to a mixing bowl and add the chili, scallions, and celery.

3. Stir in the paprika, cloves, mace, salt, and pepper. Keep refrigerated.
