Instructions: Preheat oven to 400 deg F. In a small saucepan, combine all the ingredients except the apples and cider yogurt. Place on high heat and bring to a boil. Continue boiling, stirring frequently, until the liquid is reduced by half. Remove from the heat and set aside.Core the apples, without cutting through the bottom of each. Peel each apple one-third of the way down from the top. Place the apples in a 2-quart baking dish. Pour the cider reduction into and over the apples. Bake for 30 minutes, or until tender, basting occasionally.To serve, place each apple in a bowl with the cider yogurt and top with a drizzle of the pan juices.
