Instructions: Core the apples and cut a shallow slit around the centre of each one to prevent the skin from bursting.
Arrange the apples in a shallow ovenproof dish. Mix together the apricots sugar and coriander. Pack the apricot mixture tightly into the apple cavities. Scatter the remaining filling around the apples so that it cooks in the sauce. Pour on the apple juice and dot the apples with pieces of the butter or margarine loosely cover the apples with foil and store in the refrigerator. Cook the apples uncovered in a preheated oven (180c/350f/gas4) for about 40 minutes or until they are just tender. Do not overcook them or they will collapse and lose their shape. Traditionally baked apples are served hot but they are also delicious cold with whipped cream or ice cream. Serves 4 Email this Recipe:
