Instructions: Cook pasta in boiling water until tender (12 minutes). Drain well.
Chop then soak apricots in boiling water for 5 minutes to soften. Combine eggs, cream, milk, sugar, nutmeg and cinnamon in a bowl. Mix well, add cooked pasta and apricots and stir well. Pour mixture into a shallow ovenproof dish and sprinkle with extra sugar and spices. Place dish in a baking tray and pour in enough hot water to come half way up the sides of the dish. Bake in a moderate oven (350F) for about 40 minutes until just set. Serves 4. A simple dessert. Email this Recipe:
