Instructions: Combine flour, baking powder, sugar and suet in a large mixing bowl. Work suet into dry ingredients with fingertips. mix in enough water (6-8 tblsp) to make dough leave the sides of the bowl.
Roll dough into an oblong about 30 X 45 cm. Spread with apricot jam and roll lengthwise into a large sausage shape. Seal edge with water and fold ends like an envelope. Place in a large buttered baking tin and bake in a hot oven 220C/425F for 20 to 30 minutes until golden. Serve warm with vanilla custard sauce and whipped cream. Email this Recipe:
