Instructions: Heat oven to 325 degrees. Chop artichokes and set aside. In a medium skillet, heat reserved marinade liquid 2 minutes over low heat. Add green onion and garlic; saute 5 minutes, until softened.
In a mixing bowl, combine eggs, bake mix, salt and pepper. Thoroughly mix in cheese, parsley, artichokes and onion mixture. Transfer to an 8- or 9-inch square baking dish. Bake 30 minutes, until set. Cool slightly before cutting into squares. This recipe yields 8 servings. Description: "This easy side dish can be made up to three days ahead, and can be served hot, at room temperature or cold."
