Instructions: Preheat the oven to 200 degrees C/400 degrees F/gas mark 6.
Slice the aubergines about 1 cm thick in rounds or lengthways. Brush a baking sheet with a little olive oil and arrange the slices on it in one layer. Brush generously with olive oil sprinkle with a little thyme though it should be fresh rather than dried and then with some salt and coarsely ground pepper. Bake until tender about 15-20 minutes. Spread lavishly with thick tomato sauce and a good sprinkling of Parmesan cheese and return to the oven until bubbling. Serves 2 Email this Recipe:
