Instructions: Extract the seeds from the cardamom pods and crush with a pestle and mortar.
Combine the crushed cardamom seeds orange and lemon juices sugar apricot jam butter and rum or brandy in a large shallow ovenproof dish and warm in the simmering ovenuntil the butter has melted. Peel and quarter the bananas. Add to the juice mixture and turn to coat. Cook on the grid shelf on the floor of the roasting ovenfor 20 minutes or until the bananas are soft. Serve immediately with ice cream or crime fraiche. Variation: Instead of cardamom use ground cinnamon to taste. Baked in an aromatic syrup these bananas melt in the mouth.
