Instructions: Preheat the oven to 1800C/350 degrees F/gas mark 4.
Bake the beetroot as in the recipe above or cook them in boiling water for 20 to 30 minutes till tender. Peel and slice them. Melt the butter in a shallow flameproof pan. Cook the onion in the butter for 5 minutes till golden. Add the sliced beetroot then pour in the cream. Season with a very little salt and some black pepper. Remove from the heat and bake in the oven until golden on top and bubbling. Serves 4 as a side dish Email this Recipe:
