1 lb farmer cheese
1 lb nonfat cottage cheese
1/2 cup liquid egg substitute
Juice of 1 lemon
1/2 cup sugar
1 dsh salt

1 cup unbleached all-purpose flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1 dsh salt
3/4 cup buttermilk
1 lrg egg
1 lrg egg white
1 tsp vanilla extract
Instructions:
Instructions: Preheat the oven to 300 degrees. Spray a 9-by-13-inch baking dish with nonstick cooking spray and set aside.

To make the filling, combine all of the filling ingredients in a medium-size bowl, mix well and set aside.

To make the dough, combine the flour, sugar, baking powder, baking soda and salt in another bowl. Add the buttermilk, egg, egg white and vanilla, and mix well. Beat in the melted butter.

Pour half the dough mixture into the prepared pan. Cover with the filling mixture. Pour the remaining dough mixture over the filling and bake until the top is golden brown, about 1 hour and 15 minutes. Remove from the oven and place on a rack. Allow to rest for 5 minutes before cutting into 12 slices.
