Combine biscuit crumbs, melted butter and hot water in a bowl and mix well. Press into a 20cm pie tin to cover base and sides. Filling: Zest and juice lemon. Cream cheeses in mixer. Add sugar and eggs and continue beating. Fold in cream, saltanas and lemon and mix until incorporated. Fill prepared pie dish with cheese mixture and bake in a moderate oven 350F/180C for approx 45 minutes. Turn oven off and allow to cool in oven for 10 minutes.
