Instructions: Trim spinach; wash well in several changes of water. Place in large pot with water clinging to leaves. Cover; cook only until wilted. Cool.
Gently squeeze out excess water. In medium saucepan, melt butter; add flour. Whisk and cook gently without browning for a few minutes. Add milk; bring to a boil. Add salt, pepper and nutmeg. Cook 5 minutes. Combine spinach with sauce and 1/2 cup grated cheese. Spoon into 1= quart baking dish. Sprinkle with remaining cheese. Just before serving, bake at 350F for 20 minutes or until bubbly. Makes 4 to 6 servings. Email this Recipe:
