Instructions: Cut tops from tomatoes and scoop out pulp with a melon baller or teaspoon. Reserve pulp. Cut a small slice off bottom so tomato will stand up straight.
Season inside of tomato with salt and pepper.Break an egg into each tomato case, dot with butter and bake in a moderate oven 190C/375F for 10-15 minutes until eggs are firm. Serve topped with hot curry sauce. CURRY SAUCE: Melt butter in a saucepan, add flour and cook stirring constantly 2 minutes. Add tomato pulp, milk and cream slowly, stirring constantly to obtain a smooth sauce. Simmer gently 5 minutes. Stir in curry powder and season. Strain. Email this Recipe:
