Instructions: Clean fish. Use fine, sticky clay with enough water to form a stiff, dough-like consistency. Mold clay over the entire fish, approximately one inch thick over entire fish. Bury in hot coals. Baking will take about 15 minutes per pound. When done, break clay shell and eat steaming fish inside. Season to taste. Fins and scales will stick to clay.
