Ingredients:

1 kg fish fillets
4 tbl butter
1 x lemons
1 x spr thyme, chopped
salt, pepper
1 cup cheese, grated
Instructions:
Instructions: Cut 4 pieces of aluminium foil large enough to enclose a portion of fish.

Lightly butter each sheet of foil, place into baking tray and arrange fish on the foil.

Shred a little butter on each and top with a lemon slice. Place thyme on fish, fold foil around to make a parcel. Bake in preheated moderate oven for 15 minutes.

Turn back foil, sprinkle the fish with cheese and a little paprika. Place under grill or high in the oven for several minutes or until cheese barely melts.

Use any type white fish fillets. eg snapper, rockling, trevally, blue grenadier.
