Ingredients:
Amount Ingredient
4 lb Filet of fish
1 x Green pepper, chopped
3 x Garlic cloves, chopped
3 x Bay leaves
1 can Stewed tomatoes, pureed
2 lrg Onions, chopped
4 x Celery stalks, chopped
1/2 bn parsley, chopped
x Pinch of sugar
6 x Potatoes, cut-up
Instructions:
Instructions: Saute onions, pepper, celery, garlic, and parsley in olive oil. Add blended tomatoes and bay leaves. Cook approximately for 1 hour, add sugar. Oil a roasting pan, season the fish with salt and pepper. Place fish in pan with cut-up potatoes. Pour sauce over potatoes and fish. Bake for approximately 1 hour. Basting every 15 minutes.
