Instructions: To prepare the vinaigrette:
Place the lemon in a food processor fitted with a steel blade and chop. Add the rest of the ingredients and blend. Preheat oven to 400 degrees. Place the halibut steaks in a baking dish and pour the wine and chicken broth over the fish. Top with the sliced onions and thyme. Sprinkle with black pepper and chile powder and bake in a 400-degree oven, uncovered, 10 to 12 minutes or until the fish flakes easily when tested with a fork. Carefully lift the fish out of the pan and onto serving plates. Serve with the jalapeno grapefruit vinaigrette. SERVING SUGGESTIONS: Makes a nice meal with mixed brown, white, or wild rice or a warm pasta salad. You can also serve the jalapeno grapefruit vinaigrette with broiled chicken. Email this Recipe:
