Add the cheese, stir until melted, remove from the heat, and mix in the spinach and pepper. Arrange half the potatoes in a lightly greased 12- by 7- by 2-inch baking dish, pour on half the spinach mixture, and scatter ham on top. Top with the remaining potatoes and spinach mixture. Cover with foil, set on a baking sheet, and bake for 30 minutes. Remove the foil and bake 15 minutes longer or until the potatoes are tender. This recipe serves 4 to 6.
