2 lrg fillets of mackerel
50 gm (thick) slice of butter
2 tbl sherry or walnut vinegar
Instructions:
Instructions: Put the two fillets of fish in a shallow dish large enough so that they fit comfortably.

Dot with butter and pour over the vinegar.

Season with finely chopped dill some salt and a few grinds of pepper.

Bake in a preheated oven at 200 degrees C/400 degrees F/Gas 6 for 12-15 minutes until the fish has turned opaque and juicy.

Eat hot with bread to mop up the juices.

Serves 2
