4 x mackerel filleted
1 x juice of 2 lemons
5 tbl olive oil
1 tsp fresh thyme leaves
6 x piece sun dried tomato cut into thin strips
16 x black olives stoned and sliced
chopped fresh chervil
Instructions:
Instructions: Lay the mackerel fillets in an oiled shallow oven proof dish in a single layer and season with salt and pepper.

Pour over the lemon juice cover and leave to marinate for 48 hours turning the fish occasionally. Uncover scatter with thyme and spoon on the olive oil.

Bake at 190C/375F/Gas Mark 5 for 10 minutes.

Sprinkle over the tomato and olives and bake for a further 5 minutes until the mackerel is cooked through.

Serve hot or cold.
