1 lb orange roughy fillets
1/4 cup lemon juice (2 lemons)
2 tsp dry mustard
Instructions:
Instructions: Preheat oven to 400 degrees. Place fillets in large casserole that has been sprayed with nonstick cooking spray. Squeeze lemon juice over fillets. Sprinkle mustard and tarragon leaves over fish. Bake for 10 minutes per inch of thickness, or until fish is opaque and flakes with a fork.
