6 x ripe but firm peaches halved and stoned
175 gm macaroons or amaretti biscuits
2 tbl ground almonds
2 tbl caster sugar
1/2 tsp ground cinnamon
1 x egg yolk
Instructions:
Instructions: Fromage frais or plain yoghurt to serve (optional)

For the syrup:
3 tbspns honey
2 cinnamon sticks
few strips orange peel
2 tbspns orange blossom or rose water

Preheat the oven to 180C/350F/gas 4.
Coarsely chop the pistachio nuts and biscuits (this is quicker in a food processor).

Empty into a bowl and mix into a paste with the almonds sugar cinnamon egg yolk and orange blossom water or rose water.

Fill the cavity of each peach generously with this mixture and arrange the fruit closely in a medium sized baking dish.

Make the syrup: dissolve the honey in 300ml of water over gentle heat add the cinnamon and peel and boil for 56 minutes until slightly thickened.

Add the orange or rose water and pour around the peaches.

Bake for 1 minutes until the peaches look soft without falling apart basting occasionally.

The peaches are delicious on their own or serve them with fromage frais or yoghurt.
