Instructions: Scald trotters in boiling water to remove any hairs then split down the middle on the underside. Place in a pan with onion carrots bouquet garni lemon juice and salt. Cover with water and cook for 2hr. Remove and drain. Carefully remove bones retaining the shape. Mix sweetbreads and mushrooms in a bowl. Stir in cream and season with salt and pepper. Spoon into the trotters and secure with string. Brush with butter and bake at Gas 6 400 degrees F/200 degrees C for 30 min or until golden brown. Serve with lentils and baby turnips.
