400 gm peeled tiger or king prawns
700 gm ripe tomatoes blanched skinned and chopped
115 x feta or mozzarella cheese cubed
2 tbl olive oil
1 med onion thinly sliced
1 x glass dry white wine
1 tsp dried oregano
2 tbl finely chopped fresh parsley
Instructions:
Instructions: Preheat the oven to 180 degrees C/350F/gas 4.

Heat the oil in a frying pan and saute the onion gently until translucent.

Add the wine and boil for 34 minutes.

Add the tomatoes oregano and seasoning.

Stir to mix everything and cook gently for 15-20 minutes stirring occasionally until the sauce looks quite thick.

Mix in the prawns and parsley empty the contents of the pan into an ovenproof dish and sprinkle the cheese cubes all over the top.

Bake for 20 minutes.

Serve hot.
