Ingredients:
Amount Ingredient
Splash of olive oil
1 x Onion, chopped
1 x Clove garlic, finely chopped
1 sm Pumpkin, peeled, sealed and cubed
2 x Plum tomatoes, peeled, seeded and cubed
150 ml White wine, (1/4 pint)
4 slc Thinly sliced pancetta, cut into pieces
Instructions:
Instructions: Fry onion, garlic and pancetta in the oil. Add the pumpkin and fry until golden. Add the wine, tomato and oregano.

Season and turn into an oven proof dish.

Bake for 20 minutes, until the pumpkin is softened and golden.

Garnish with extra chopped herbs.
