A quince is a yellow-skinned fruit that tastes like a cross between an apple and a pear. Because of their hard texture, they taste better cooked. Remove stone from quinces, keeping fruit as intact as possible for stuffing. (A melon baller works well.) If using apples, core. Preheat oven to 350 degrees. In a medium bowl, mix almonds, brown sugar, wine and cloves. Place quinces or apples in buttered baking dish. Fill quinces or apples with filling; dust tops with cinnamon and bake until quinces or apples are tender, about 50 minutes. Let cool. Serve topped with syrup from baking dish. Makes 6 servings.
