Yield:
6 to 8 servings
Ingredients:

1/2 cup chopped celery
1/2 cup chopped onion
1/3 cup butter or margarine
1/2 tsp salt
1/2 tsp dried whole tarragon
1/8 tsp ground black pepper
3 cup soft bread crumbs
3 tbl milk
6 x (8 oz) red snapper fillets
Instructions:
Instructions: Saute celery and onion in 1/3 cup butter in a medium skillet until tender. Add salt, tarragon, and pepper; mix well. Stir in bread crumbs and milk.

Place 3 fillets in a greased 13- x 9- x 2 inch baking dish. Spoon bread crumb mixture over fillets; top with remaining fillets, and brush with 2 tablespoons melted butter. Bake at 400 degrees F. about 35 minutes or until fish flakes easily when tested with a fork.

Yield: 6 to 8 servings.
