1/2 cup butter
1 x onion peeled, chopped
2 x garlic cloves crushed
1 lb spinach cleaned, stemmed,
and cut into strips
1/2 tsp salt
1 cup grated mozzarella cheese divided
1 tsp paprika
1/4 tsp freshly-ground black pepper
1/8 tsp ground nutmeg
4 x eggs
Instructions:
Instructions: Preheat oven to 350 degrees. Lightly grease a medium baking dish.

In a large stockpot, melt butter over medium heat. Add onion and garlic and saute for 2 to 3 minutes to soften. Add spinach and salt. Reduce heat to low. Cover and steam for 5 minutes; remove from heat.

Sprinkle half of the mozzarella cheese in the bottom of prepared baking dish. Spoon in spinach mixture and sprinkle with paprika, pepper and nutmeg.

In a medium bowl, beat together egg and milk; pour over spinach mixture. Top with remaining mozzarella cheese. Bake until the cheese bubbles, about 20 minutes. Let stand 5 minutes before cutting.

This recipe yields 6 servings.
