Instructions: Preheat oven to 350 degrees. Lightly grease a medium baking dish.
In a large stockpot, melt butter over medium heat. Add onion and garlic and saute for 2 to 3 minutes to soften. Add spinach and salt. Reduce heat to low. Cover and steam for 5 minutes; remove from heat. Sprinkle half of the mozzarella cheese in the bottom of prepared baking dish. Spoon in spinach mixture and sprinkle with paprika, pepper and nutmeg. In a medium bowl, beat together egg and milk; pour over spinach mixture. Top with remaining mozzarella cheese. Bake until the cheese bubbles, about 20 minutes. Let stand 5 minutes before cutting. This recipe yields 6 servings.
