Instructions: Heat oven to 375F degrees. If desired, rub potatoes with shortening or wrap in foil. Bake at 375F degrees for about 1 hour or until tender. Cut a slice from top of each potato; carefully scoop out potato pulp into large bowl. Add sour cream, margarine, salt, mustard and pepper; beat until smooth and fluffy. Stir in pimentos.
Spoon mixture into potato shells. Place in ungreased 13x9-inch pan. Bake an additional 20 to 25 minutes or until lightly browned. Email this Recipe:
