Instructions: Makes 6 to 8 servings. VEGAN
Preheat oven to 350 degrees. Lightly oil 1-quart baking dish. In large pot fitted with steamer basket, steam sweet potatoes until tender, about 15 minutes. When cool enough to handle, remove skins, puree sweet potatoes in blender or food processor with remaining ingredients until smooth and thick. Turn mixture into baking dish; bake 20 minutes.
