Instructions: Preheat the oven to 400F. Drain the tofu. Cut the tofu in half and then in thirds along the width to make 6 slices about 1/2 inch thick. Line a baking pan with parchment paper.
In a shallow bowl, combine the tamari and maple syrup. Dip the tofu in the marinade and place on the baking pan. Bake for 20 to 30 minutes. Turn the tofu over, brush with any remaining marinade, and bake for 20 minutes, or until caramel brown. Let cool. Store in an airtight container in the refrigerator for up to 4 days. NOTES : This recipe yields tofu with a firm texture and a lacquered skin. Its great for sauteing, smoking, or adding to salads, stews and soups because it will not disintegrate like raw tofu.
