4 lrg tomatoes (about 3 lbs.)
3 lrg yellow bell peppers (about 1 1/2 lbs.)
1 med onion sliced
6 tbl olive oil
1/2 tsp dried basil crushed
1 tsp salt
1/4 tsp pepper
Instructions:
Instructions: Cut the tomatoes into 1/2" wedges. Cut the peppers lengthwise into 1/4" julienne slices. In a baking dish toss the tomato, peppers slices and onion slices with the olive oil and basil. Sprinkle with the salt and pepper. Bake in a 300 degree oven for 1 1/2 hours, until all are very soft. Remove from the oven and let cool. Add the olives and stir well. Cover and chill for 2 or 3 days before serving.

Rayna Says: This is a recipe that can be made ahead, it is best after chilling for a few days, making it ideal for picnics and cookouts. It makes a nice relish type topping for grilled meats or fish.
