Instructions: Cut the tomatoes into 1/2" wedges. Cut the peppers lengthwise into 1/4" julienne slices. In a baking dish toss the tomato, peppers slices and onion slices with the olive oil and basil. Sprinkle with the salt and pepper. Bake in a 300 degree oven for 1 1/2 hours, until all are very soft. Remove from the oven and let cool. Add the olives and stir well. Cover and chill for 2 or 3 days before serving.
