Instructions: Preheat the oven to 400F/200C degrees.
Rub the tuna steaks with 1 tblsp olive oil and season lightly with pepper. Slice onion fine. In a large frying pan, saute the onion in the remaining oil until it is limp. Add chopped tomatoes and vermouth and cook briefly. Place the steaks in a shallow baking dish, pour on the onion/tomato mixture, and bake about 20 minutes, covered, depending on the thickness of the tuna steaks. Fish will flake easily when cooked through; Sprinkle with basil and serve. Other varieties of fish can also be used in place of tuna. eg trevally, blue eye, snapper etc. Email this Recipe:
