2 lb whiting fillets
1/3 cup sliced mushrooms
2 lrg scallions chopped
1 tsp salt or to taste
1/2 tsp freshly-ground black pepper
2 tbl dry white wine
2 tsp lemon juice
1/4 cup grated Cheddar cheese
1/4 cup bread crumbs
Instructions:
Instructions: Prepare a baking dish with non-fat cooking spray, or a light coating of margarine. The dish should be large enough to hold whiting fillets in one layer. Sprinkle mushrooms and scallions over the bottom of the dish. Season the fish with salt and pepper and sprinkle wine and lemon juice over all. Top with grated cheese and sprinkle with bread crumbs. Pour melted margarine evenly over the topping.

Cover and bake at 400 degrees for 7 minutes. Uncover and bake another 5 minutes, or until topping is golden brown.

This recipe yields 4 servings.
