2 tsp olive oil
4 x pork chops, 1 inch thick each (1 1/2 lbs.)
Salt
Freshly ground pepper
1/4 cup minced shallots
1/2 cup chicken broth
1/4 cup balsamic vinegar
1/4 tsp thyme
Instructions:
Instructions: 1. Heat oil in skillet over medium-high heat, 2 minutes. Sprinkle pork chops with salt and pepper. Add to skillet and cook 5 minutes per side.

Transfer to platter and keep warm.

2. Add shallots to pan; cook, stirring, 1 minute. Add broth, vinegar and thyme; cook, stirring, over high heat 5 minutes. Remove from heat; stir in butter. Pour over chops.

Makes 4 servings.
