Ingredients:
Amount Ingredient
3 x cloves roasted garlic squeezed from their skins
2 tbl balsamic vinegar
2 tbl vegetable or chicken stock
2 tbl olive oil
1/2 tsp minced fresh rosemary or 1 teaspoon dried rosemary
Instructions:
Instructions: In a food processor or blender process all ingredients until emulsified.

Taste for salt and pepper.

Store in an airtight container in the refrigerator for up to 5 days.

Roasting garlic:
Preheat oven to 400F.
Cut top third from bulb of garlic.

Wrap in foil and roast about 40 minutes or until garlic is soft.

Roasted garlic gives both a sweet nutty flavour and a creamy texture here. Try this on soft leaf lettuces and for a more substantial meal add sliced chicken breast.
